Impressively wrapped chicken fillets with bacon, gourmet blue cheese, and couscous filling.
Ingredients:
  • 125.00 ml CousCous
  • 36.40 gm olive oil
  • 100g cup mushrooms, finely chopped
  • 50g blue cheese, crumbled
  • 20.00 ml finely chopped flat-leaf parsley
  • 4 chicken breast fillets
  • 4 rashers middle bacon
  • Green salad, to serve
Instructions:
  • In a medium heatproof bowl, combine couscous with 1/2 cup boiling water. Stir gently until liquid is absorbed. Cover and let it sit for 3 minutes. Fluff the couscous with a fork to separate the grains, cover and rest for another 2 minutes. Fluff once more and allow it to cool.
  • In a large frying pan over medium-high heat, sizzle half the oil. Saute the mushrooms until golden, about 4-5 minutes. Remove from heat and let cool. Mix the cooked mushrooms with cheese, parsley, and couscous. Season with pepper and toss everything together.
  • Carefully butterfly each chicken fillet without cutting all the way through. Place one fillet between two sheets of baking paper and gently pound with a rolling pin until flattened. Season the inside of the chicken with pepper. Spread a quarter of the couscous mixture on one half of the chicken, leaving a 1 cm border. Fold the other half over to enclose the filling, pressing the edges together. Wrap the chicken with a strip of bacon. Repeat this process with the remaining chicken, couscous mixture, and bacon.
  • In a large frying pan over medium heat, heat the remaining oil. Cook the chicken parcels for 5-6 minutes on each side until they are golden and cooked through. Serve the sliced chicken with a salad.
