Couscous Vegetable Salad

Whip up a quick and tasty couscous salad with fresh veggies in no time – ideal as a side dish!
Ingredients:
  • 1 cup uncooked couscous
  • Olive oil-flavored or regular cooking spray
  • 1 medium zucchini, cut into 1/4-inch slices (2 cups)
  • 1 medium yellow summer squash, cut into 1/4-inch slices (1 1/2 cups)
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1/2 medium red onion, cut into 8 wedges
  • 1 container (7 ounces) refrigerated basil pesto
  • 2 tablespoons balsamic or cider vinegar
Instructions:
  • Prepare fluffy and flavorful couscous following the package instructions.
  • Prepare a 10-inch nonstick skillet by lightly spraying it with cooking spray and heating it over medium-high heat. Add zucchini, yellow squash, bell pepper, and onion to the skillet; lightly spray the vegetables with cooking spray. Stir frequently and cook for about 5 minutes until they are crisp-tender.
  • Combine couscous, vegetable mixture, pesto, and vinegar in a large bowl. Serve right away or refrigerate for up to 2 hours before serving.
