Couscous with Vegetarian Spaghetti Sauce

Quick and satisfying dinner topped with fresh parsley for a flavorful touch.
Ingredients:
  • 2 cups water
  • 1 1/3 cups uncooked couscous
  • 1 (28-oz.) jar chunky vegetable spaghetti sauce
  • 1 (15-oz.) can garbanzo beans (Chickpeas), drained, rinsed
  • 1/8 to 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Bring water in a medium saucepan to a boil, then stir in couscous. Cover the saucepan, remove from heat, and let it stand for 5 minutes or until the liquid is absorbed.
  • In a saucepan, mix spaghetti sauce, beans, and red pepper flakes. Heat over medium heat for 5 to 7 minutes until hot, stirring occasionally.
  • Fluff the fluffy couscous with a fork, then generously ladle the flavorful sauce mixture over the fluffy couscous. Top it off with a sprinkling of fresh parsley and, for an extra touch of indulgence, add a scattering of shredded fresh Parmesan cheese.
