Elevate dinner with crispy chicken and creamy avocado salsa.
Ingredients:
  • 8 chicken thigh fillets, trimmed
  • 125.00 ml couscous
  • 250.00 gm boiling water
  • 1 small tomato, deseeded, finely chopped
  • 62.50 ml flat-leaf parsley leaves, finely chopped
  • 2 large limes, juiced
  • 2 green onions, chopped
  • 1 large avocado, chopped
  • 1/2 small red onion, finely chopped
  • 1/2 green capsicum, finely chopped
  • 40.00 ml coriander leaves
Instructions:
  • 1. Preheat the oven to 180°C. 2. Heat oil in a large frying pan over medium-high heat. 3. Brown the chicken in 2 batches for 2 minutes on each side. 4. Transfer the browned chicken to a lightly greased baking dish in a single layer.
  • In a heatproof bowl, mix couscous and water, cover, and let it stand for 10 minutes until water is absorbed. Fluff the grains with a fork, then gently mix in tomato, parsley, 2 tablespoons of lime juice, and green onion.
  • Cover each piece of chicken with a generous 1/4 cup of couscous mixture, gently pressing it down to hold it in place. Bake without a cover for 25 minutes or until fully cooked.
  • Combine ripe avocado, vibrant red onion, crunchy capsicum, fresh coriander, and the remaining zesty 2 tablespoons of lime juice in a bowl. Gently stir to mix well.
  • Arrange 2 pieces of chicken on individual serving plates and generously top with avocado salsa before serving.
