Tasty Mardi Gras side dish, easily adaptable for vegetarians by skipping the bacon. Bold flavors with a spicy kick.
Ingredients:
  • 1 pound dry pinto beans
  • 4 slices bacon, cooked and crumbled
  • 0.5 teaspoon crushed red pepper flakes
  • 1 clove garlic, chopped
  • 2 tablespoons butter
  • 2 cups chopped onion
  • 1.6666666269302 cups canned stewed tomatoes
  • 0.25 cup chopped fresh parsley
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon dried marjoram
  • 1.25 tablespoons chili powder
Instructions:
  • Begin by generously soaking pinto beans in water overnight. Drain the beans and transfer them to a large cooking pot, covering them with fresh water. Introduce the bacon, red chile flakes, and garlic. Bring the pot to a boil, then lower the heat and simmer covered for approximately 3 hours.
  • In a large skillet over medium-high heat, melt butter until sizzling. Cook onions until tender and translucent. Stir in tomatoes, parsley, cumin, marjoram, and salt. Let the flavors meld together by simmering on low heat for approximately 45 minutes.
  • Once the beans are tender, discard any excess water. Add the tomato mixture and simmer for another 20 minutes, stirring occasionally. Serve hot.
