Ingredients:
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 egg yolks
  • 3 tablespoons sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla
  • 2 tablespoons sugar
Instructions:
  • Preheat the oven to 350°F. Grease a 9-inch tart pan with a 1-inch rim and removable bottom with cooking spray. In a small bowl, combine flour, baking powder, and salt; set aside.
  • In a large bowl, cream together softened butter and 1/2 cup sugar until smooth. Mix in 1 egg and 1/2 teaspoon vanilla extract. Gradually add the flour mixture and mix well. Press the dough firmly into the bottom and up the sides of a tart pan using floured fingers. Place the tart pan on a baking sheet with a rim.
  • Bake for 10 to 14 minutes until the crust is set in the center but still pale. Let it cool for 10 minutes, then carefully flatten the partially baked dough in the center and up the sides using a flat-bottom measuring cup.
  • In a medium bowl, whisk together egg yolks, 1 whole egg, and 3 tablespoons of sugar until smooth. Stir in whipping cream and 1 teaspoon of vanilla extract. Place the tart pan on a rimmed baking sheet and pour the egg mixture into the partially baked crust. Carefully transfer to the oven on the baking sheet.
  • Bake for 30 to 34 minutes until the custard layer is perfectly set. Cool on a rack for 30 minutes, then refrigerate uncovered for at least 2 hours.
  • Before serving, prepare the tart for broiling by covering the crust edge with a 2- to 3-inch wide strip of foil to prevent excessive browning. Sprinkle the top of the tart evenly with 2 tablespoons of sugar. Place the tart pan on a rimmed baking sheet with the top about 5 inches from the heat source. Broil for 1 to 2 minutes, or until the top is golden brown and the sugar has melted. Remove the tart from the oven and carefully lift it out of the pan.
