Indulge in a decadent Crème Egg cheesecake with an Oreo crust for Easter.
Ingredients:
  • 2 x 137g pkts Oreo Original biscuits
  • 100g butter, melted
  • 200g dark chocolate, chopped
  • 60ml water
  • 9.00 gm gelatine powder
  • 3 x 250g pkts cream cheese, softened
  • 110g caster sugar
  • 300ml thickened cream
  • 8 Crème Eggs
  • Yellow and red liquid food colouring
  • 1 tsp vanilla bean paste
  • Cadbury Crème Eggs, extra, to decorate
  • Cadbury Crème Eggs Minis, to decorate
Instructions:
  • Prepare a 23cm round spring-form pan by greasing and lining the base and sides with baking paper.
  • Pulse the biscuits in a food processor until finely crushed. Mix in the butter until well combined. Press the mixture firmly into the prepared pan using a straight-sided glass. Chill in the fridge for 30 minutes.
  • In a heatproof bowl, gently melt the dark chocolate over a saucepan of simmering water. Stir with a metal spoon until smooth, then remove from heat.
  • Pour the boiling water into a small heatproof glass. Add the gelatine and stir until it dissolves completely.
  • Beat cream cheese and sugar with an electric mixer until smooth. Pour in cream and beat until blended. Fold in gelatine mixture until fully combined.
  • Stir in a portion of the cream cheese mixture into the dark chocolate until combined. Pour the mixture into the prepared pan and smooth the top with a spoon. Freeze for 15 minutes or until firm.
  • Cut creme eggs in half and scoop out filling into a medium bowl, setting aside chocolate shells for later. Mix in half of the remaining cream cheese mixture. Add a few drops of yellow and red food coloring to create an orange hue. Blend well and pour over the chocolate base, smoothing the top. Freeze for another 15 minutes.
  • Stir in the vanilla bean paste with the remaining cream cheese mixture until combined. Pour over the orange layer, smooth the surface, and refrigerate for 3 hours or until set.
  • Plate the cheesecake and garnish with additional Cadbury Crème Eggs and Cadbury Crème Egg Minis before serving.
