Crab and capsicum linguine

Indulge in this speedy crab pasta dish for a delightful weeknight dinner.
Ingredients:
  • 350g linguine
  • 18.20 gm olive oil
  • 2 garlic cloves, finely chopped
  • 2 red capsicums, thinly sliced
  • 2 long red chillies, seeds removed, roughly chopped
  • 300g cooked fresh crabmeat (see note)
  • 42.00 gm lemon juice, or to taste
  • 125.00 ml roughly chopped flat-leaf parsley leaves
Instructions:
  • Boil pasta in generously salted water as per package directions. Save 1/4 cup (60ml) of the cooking water before draining.
  • Heat oil in a large, deep frypan over medium-low heat, then sauté garlic and capsicum until softened, about 2-3 minutes. Stir in chilli, crab, juice, and season with salt and pepper. Add pasta, reserved water, and parsley, toss well, and serve immediately.
