Crispy crab fritters with zesty mayo dip - a sophisticated seafood starter with a kick.
Ingredients:
  • 0.75 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon prepared horseradish
  • 2 cloves garlic, peeled
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh chives
  • 2 cups oil for frying
  • 1 cup hush puppy mix
  • 0.5 cup milk
  • 1 egg
  • 1 pound cooked lump crabmeat
Instructions:
  • In a food processor, blend mayonnaise, mustard, horseradish, garlic, and lemon juice until smooth. Transfer to a bowl, mix in chives, cover, and chill until serving.
  • Preheat oil to 375 degrees F (190 degrees C. Mix hush puppy mix, milk, egg, and crabmeat until smooth. Drop batter by tablespoons into hot oil and fry for 2 to 3 minutes until golden brown, flipping if necessary. Drain on paper towels and serve with garlic sauce.
