Impress guests with a simple cranberry tart recipe for effortless entertaining.
Ingredients:
  • 40.40 gm thickened cream
  • 9.20 gm extra virgin olive oil
  • 1/4 small red onion, finely chopped
  • 60ml (1/4 cup) red wine
  • 20.00 ml red wine vinegar
  • 20.00 gm raw caster sugar
  • 2 whole cloves
  • 50g (1/3 cup) dried cranberries
  • 150g fresh goat's cheese
  • 24 bought mini vol au vents or mini tart shells
  • 30g (1/4 cup) walnut pieces, toasted
Instructions:
  • In a small saucepan, warm the oil over gentle heat. Sauté the onion until soft, about 2 minutes. Mix wine, vinegar, and sugar in a jug. Pour the wine mixture and cloves into the saucepan. Stir until the sugar dissolves, about 1 minute. Add the cranberries and simmer until thick and syrupy, about 5-6 minutes, stirring occasionally. Let it cool completely before using.
  • Blend the goat's cheese and cream in a food processor until silky. Chill in the fridge for 15 minutes until slightly firm.
  • Prepare the vol au vents according to the instructions on the packet. Allow them to cool completely.
  • Fill each vol au vent with a generous teaspoon of relish, followed by a dollop of the goat's cheese mixture sprinkled with nuts. Serve promptly for best taste.
