Delicious warm cranberry cobbler can be customized with blueberries, cherries, or rhubarb. Serve with a scoop of vanilla ice cream for a delightful treat.
Ingredients:
  • 2.5 cups fresh cranberries
  • 1.25 cups white sugar, divided
  • 1 cup all-purpose flour
  • 0.75 cup butter, melted
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and grease an 8-inch baking dish with cooking spray.
  • Evenly coat the cranberries in the baking dish with a generous sprinkle of 1/4 cup of sugar.
  • Combine the remaining 1 cup sugar, flour, and melted butter in a large bowl. In a separate bowl, whisk eggs, then stir into the sugar-flour mixture until smooth. Pour the mixture over the cranberries in the baking dish.
  • Bake in the oven until the berries are bubbling and the topping is lightly browned, approximately 1 hour.
