Cream of cauliflower soup

Deliciously easy cream of cauliflower soup.
Ingredients:
  • 1 brown onion, finely chopped
  • 2 tsp ground coriander
  • 2.50 gm ground cumin
  • 1/4 tsp chilli flakes
  • 750g cauliflower, trimmed, cut into florets
  • 510.00 gm vegetable liquid stock
  • 500.00 gm water
  • 63.13 gm pouring cream or creme fraiche
Instructions:
  • In a saucepan over medium heat, sauté onion and garlic in oil until very soft, stirring occasionally for about 6 to 7 minutes.
  • Sprinkle in fragrant coriander, cumin, and a touch of spicy chilli flakes. Crank up the heat to high and stir for 2 minutes. Introduce the cauliflower, stock, and water. Cover and bring to a vigorous boil. Reduce heat to low and let it gently simmer, partially covered, for 30 minutes until the cauliflower is fork-tender. Allow it to rest for 20 minutes before serving.
  • Puree soup in batches until velvety. Transfer back to saucepan. Swirl in cream and warm gently. Season generously with salt and pepper.
