Creamy homemade tomato soup with fresh tomatoes and a velvety roux.
Ingredients:
  • 2 large tomatoes, chopped
  • 0.5 cup chopped onion
  • 0.5 teaspoon white sugar
  • salt and ground black pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
Instructions:
  • Simmer tomatoes, onion, sugar, salt, and pepper in a saucepan over medium heat until onion is soft, about 5 to 10 minutes. Then strain the flavorful broth into a bowl, discarding any solids.
  • Melt butter in a saucepan over gentle heat, stirring in the flour until fragrant for about 3 minutes. Gradually whisk in milk and cook until thickened for 5 to 7 minutes. Add strained tomato broth and heat through for 5 to 6 minutes. Serve while hot.
