Creamy Artichoke Pasta

Quick and easy creamy pasta with a lighter artichoke sauce. Customize seasonings to your liking.
Ingredients:
  • 12 ounces uncooked spaghetti
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 (6 ounce) can marinated artichoke hearts
  • 1 small onion
  • 3 cloves garlic, chopped
  • 0.125 teaspoon ground cayenne pepper
  • 1 teaspoon dried oregano
  • 0.5 cup low-fat cottage cheese
  • 0.5 cup low-fat sour cream
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti until al dente, then drain and keep warm.
  • While the pasta cooks, warm a large skillet over medium-high heat and add olive oil, butter, and artichoke heart liquid. Cut the artichoke hearts into bite-size pieces. Once the oil mixture is hot, add onion and garlic, cooking until soft and lightly browned. Add the artichoke hearts, saute until warm. Season with salt, black pepper, cayenne pepper, and oregano. Remove from heat, stir in cottage cheese and sour cream. Mix with cooked pasta and sprinkle with Parmesan cheese before serving.
