Creamy chicken curry with aromatic spices and dairy-free cashew cream by Chef John.
Ingredients:
  • 2 teaspoons kosher salt, or more to taste
  • 2 teaspoons paprika
  • 2 teaspoons garam masala
  • 1.5 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon ground turmeric
  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon vegetable oil
  • 2 tablespoons butter, divided
  • 1 yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon minced fresh ginger root
  • 1 cup chicken broth
  • 2 cups cold water
  • 0.75 cup whole roasted cashews
  • 0.33333334326744 cup sliced green onions
  • 0.33333334326744 cup freshly chopped cilantro
  • 1 lime, juiced
Instructions:
  • Combine salt, paprika, garam masala, cumin, coriander, cayenne, and turmeric in a small bowl to create a flavorful spice mix. Set aside.
  • Cut each chicken thigh in half lengthwise along the crease, then halve the thicker portion to create three 2-inch pieces. Repeat with the rest of the chicken thighs.
  • Place the chicken in a bowl. Drizzle oil and sprinkle about half of the spice blend over the chicken; mix well to coat. Cover the bowl with plastic wrap and marinate in the fridge for 4 to 12 hours.
  • Heat 1 tablespoon of butter in a large pan over high heat until melted and golden brown. Place chicken in a single layer in the pan and cook until golden brown on each side, approximately 4 to 5 minutes. Transfer chicken and its juices back to the bowl.
  • In the same pan, heat the rest of the butter over medium-high heat. Add onion, garlic, tomato paste, ginger, and the rest of the spice blend. Sauté until fragrant, about 2 to 3 minutes. Pour in chicken broth, bring to a simmer, and add chicken along with any juices.
  • Blend water and cashews until ultra-smooth. Stir into the pan. Simmer on medium heat for 15 to 20 minutes. Add green onions and cilantro, adjust seasoning to taste, and finish with a squeeze of lime juice.
