Indulge in a comforting chicken and mushroom pasta casserole, a timeless favorite.
Ingredients:
  • 1 package (16 oz) vermicelli
  • 1/2 cup chicken broth
  • 4 cups chopped cooked chicken
  • 1 can (10 3/4 oz) condensed cream of mushroom soup
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1 can (10 3/4 oz) condensed cream of celery soup
  • 1 container (8 oz) sour cream
  • 1 jar (6 oz) sliced mushrooms, drained
  • 1/2 cup shredded Parmesan cheese (2 oz)
  • 1 teaspoon pepper
  • 2 cups shredded Cheddar cheese (8 oz)
Instructions:
  • Preheat oven to 350°F and generously coat 2 (11x7-inch) glass baking dishes with cooking spray.
  • Cook vermicelli according to package instructions for minimum time. Drain and return to saucepan, then add broth and toss to coat.
  • Combine chicken, soups, sour cream, mushrooms, Parmesan cheese, pepper, and salt in a large bowl. Mix in vermicelli until well combined. Transfer mixture to baking dishes and top with Cheddar cheese before baking.
  • Bake covered for 30 minutes, then uncover and bake for an additional 5 minutes until the cheese is bubbly.
