Zesty marinated chicken with a spicy kick - a crowd favorite!
Ingredients:
  • 2 cloves garlic, minced
  • 2 serrano peppers, finely chopped
  • 2 tablespoons minced fresh ginger root
  • 0.5 cup chopped fresh cilantro
  • 2 teaspoons grated lime zest
  • 2 tablespoons soy sauce
  • 1 tablespoon white sugar
  • 0.75 cup unsweetened coconut milk
  • 4 boneless, skinless chicken thighs
Instructions:
  • In a powerful blender or food processor, blend together garlic, serrano peppers, ginger, cilantro, lime zest, soy sauce, sugar, and coconut milk until creamy.
  • Transfer the chicken into a spacious resealable bag, and add the blended liquid. Seal the bag and refrigerate for approximately 1 hour, remembering to turn it over halfway through, after 30 minutes.
  • Preheat the broiler in the oven. Arrange the chicken on a broiling pan and transfer the marinade to a saucepan.
  • Broil the chicken until golden brown and the juices run clear, about 10 minutes per side. In a separate pot, bring the marinade to a boil then simmer over medium heat for 5 minutes before removing from the heat.
  • Transfer the chicken to a serving plate and generously drizzle the sauce on top before serving.
