Indulge in a decadent asparagus side dish bursting with rich flavors that will leave your guests begging for more.
Ingredients:
  • 4 quarts water
  • 2 lb fresh asparagus spears, trimmed (about 35 spears per lb)
  • 2 packages (5.2 oz each) Boursin® cheese with garlic and herbs, softened
  • 1 cup heavy whipping cream
  • 3/4 cup shredded fresh Parmesan cheese
  • 2 medium plum (Roma) tomatoes, seeded and chopped
  • 1 teaspoon fresh thyme leaves
Instructions:
  • Preheat oven to 400°F.
  • For blanched asparagus, bring 4 quarts of water (with 1 tablespoon salt, optional) to a boil in a 6-quart Dutch oven. Add asparagus and cook for 3 to 4 minutes until crisp-tender. Transfer asparagus to a bowl of ice-cold water immediately. Allow to chill for 5 minutes, then drain and gently pat dry with paper towels.
  • Arrange the asparagus spears in a cozy 13x9-inch (3-quart) baking dish.
  • Combine Boursin™ cheese and whipping cream in a medium bowl, whisk or stir until smooth. Mix in Parmesan cheese, then spread over asparagus and finish by topping with tomatoes.
  • Bake until warmed, about 15-20 minutes. Finish with a sprinkle of fresh thyme.
