Try this flavorful Hatch chile chicken with rotisserie chicken, corn, and tangy Mexican crema using New Mexico's Hatch chiles.
Ingredients:
  • 5 Hatch chile peppers
  • 1.5 tablespoons butter
  • 1 onion, cut into strips
  • 1 cup frozen corn
  • 0.75 tablespoon chicken bouillon granules
  • 0.25 teaspoon ground black pepper
  • 1.5 cups shredded rotisserie chicken
  • 1 cup Mexican crema
Instructions:
  • Char the Hatch chiles over medium heat on a gas stove until blackened and charred, about 5 minutes, flipping with tongs. Let them cool in a sealed plastic bag for 7 to 8 minutes. Peel off the charred skins, remove seeds, and cut flesh into 1-inch squares.
  • Heat butter in a pan until melted, then saute onion until translucent, roughly 5 minutes. Mix in corn, chiles, chicken bouillon granules, and pepper, combining well. Gently stir in chicken and crema, simmer until heated through, approximately 5 minutes.
