Try this delicious weeknight pasta with kale, sweet sausage, and a creamy sauce for a flavorful twist on a classic dish!
Ingredients:
  • 10 ounces gemelli pasta
  • 1 tablespoon olive oil
  • 3 (3.5 ounce) links sweet Italian sausage, casings removed
  • 1 tomato, diced
  • 0.5 onion, diced
  • 0.5 cup low-sodium chicken broth
  • 0.5 bunch kale, thick stems removed, leaves finely chopped
  • salt and freshly ground black pepper to taste
  • 1.75 cups milk
  • 1 tablespoon grated Parmesan cheese, or to taste
Instructions:
  • Bring a generously salted pot of water to a boil, then cook gemelli, stirring occasionally, until al dente, about 11 minutes.
  • In a large skillet over medium-high heat, heat oil until shimmering. Add sausage and cook until golden brown and cooked through, about 5 minutes. Add tomato, onion, and garlic; sauté for 3 minutes. Deglaze the pan with chicken broth, scraping up the browned bits. Add kale and cook until wilted and tender, about 5 minutes. Season with salt and pepper to taste.
  • While the kale is cooking, save 1/2 cup of pasta water, and drain the pasta. In a medium saucepan over medium heat, melt butter. Stir in flour and cook for 1 minute, whisking constantly. Slowly pour in milk while whisking vigorously until smooth. Season with salt and pepper, and cook until the mixture bubbles and thickens, about 7 to 10 minutes. Adjust consistency with the reserved pasta water as necessary. Remove sauce from heat.
  • Combine the sauce with the sausage mixture, add the drained pasta, and toss until everything is evenly coated. Serve warm and sprinkle with Parmesan cheese before enjoying.
