Creamy lemon buttercrust slice recipe

Irresistible no-bake lemon cheesecake slice with a luscious cream cheese filling on a buttery biscuit base. A dessert you'll love!
Ingredients:
  • 250g pkt sweet plain biscuits
  • 125g butter, melted
  • 3.00 gm gelatine powder
  • 500g cream cheese, chopped, at room temperature
  • 395g can NESTLÉ Sweetened Condensed Milk
  • 60ml (1/4 cup) fresh lemon juice
  • 20.00 ml finely grated lemon rind, plus extra finely shredded lemon zest, to serve
Instructions:
  • Prepare a 16 x 26cm slice pan by greasing it and lining it with baking paper, ensuring that the paper extends up all sides.
  • Crush the biscuits in a food processor until coarse. Blend in the butter. Press the mixture into the pan using a flat-bottomed glass to form the base and sides. Chill in the refrigerator for 20 minutes to set.
  • In a small microwave-safe bowl, combine 1 tablespoon water and gelatin. Let it sit for 2-3 minutes to soften. Microwave for 10 seconds until hot. Whisk with a fork until gelatin dissolves. Let it cool slightly before using.
  • Clean the food processor, then blend in the cream cheese until almost smooth. Mix in the condensed milk, lemon juice, and rind until well combined. Blend in the gelatin mixture until fully incorporated. Pour the mixture over the biscuit base and level the top. Chill in the fridge for 3 hours, or until firm.
  • Gently lift the slice from the pan using the paper. Sprinkle with zest and cut into bars before serving.
