Creamy baked chicken meatballs in one-pan perfection.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 500g chicken mince
  • 125.00 ml panko breadcrumbs
  • 1 green onion, finely chopped
  • 20.00 ml chopped fresh oregano leaves
  • 2 tsp finely grated lemon rind
  • 500g jar Creamy Carbonara Pasta Sauce
  • 1 bunch broccolini, trimmed, steamed
  • Cooked white long-grain rice, to serve
  • Fresh oregano leaves, to serve
  • Lemon zest, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and pour oil into a 6-cup-capacity roasting pan.
  • Mix together the mince, breadcrumbs, onion, oregano, garlic, and lemon rind in a bowl. Season with salt and pepper, then shape level tablespoons of the mixture into balls. Arrange the balls in a pan and bake for 15 minutes.
  • Lower oven temperature to 180C/160C fan-forced. Pour pasta sauce over meatballs in the pan and bake for an additional 10 to 15 minutes until sauce is bubbling and meatballs are fully cooked.
  • Garnish broccolini and rice with a sprinkle of oregano and lemon zest before serving with meatballs.
