Creamy lemon pasta: Quick and delicious dish with cheesy-tart magic, ready in under 30 minutes.
Ingredients:
  • 12 ounces pasta
  • 2 1/4 teaspoons kosher salt, divided, plus more to taste
  • 1 cup (8 ounces) ricotta cheese
  • 1/3 cup (1.25 ounces) freshly grated Parmesan cheese, plus more for garnish
  • 1 to 2 lemons
  • Freshly ground black pepper
  • 2 teaspoons olive oil
  • 3 cloves garlic, minced
  • Fresh basil or parsley leaves, for garnish
Instructions:
  • Prepare the pasta: Boil a large pot of salted water, then add the pasta and cook until al dente as per package instructions. Remember to set aside 1 cup of pasta water before draining.
  • Prepare the sauce: As the water heats up and the pasta is cooking, create the sauce. To achieve an exceptionally creamy texture, combine ricotta and Parmesan in a small to medium food processor with the blade attachment. Utilize the zest of a lemon and extract 2 tablespoons of lemon juice from 1 to 2 lemons. Incorporate these with the cheeses. Enhance the flavor with 1/4 teaspoon salt and a few twists of pepper, blending until luxuriously smooth.
  • Prepare the creamy sauce and combine with the pasta: Warm olive oil in a large skillet over medium heat, then sauté garlic until fragrant. Lower the heat, mix in ricotta cheese, Parmesan, and lemon, and pour in 1/4 cup of pasta water. Stir well. Add cooked pasta to the sauce, raise the heat to medium-low, and toss until the sauce thickens, about 3 to 4 minutes. Adjust seasoning with salt, pepper, and lemon juice to taste.
  • To serve, garnish generously with extra Parmesan cheese and fragrant basil or parsley. Enjoy this pasta fresh. To store any leftovers, refrigerate in an airtight container for up to 4 days.
