Kids will devour this indulgent creamy mac 'n' cheese.
Ingredients:
  • 625.00 ml dried elbow pasta
  • 1 small head broccoli, cut into small florets
  • 3 green onions, sliced
  • 100g 97% fat-free shaved leg ham, sliced
  • 187.50 ml frozen peas
  • 40.00 ml plain flour
  • 23.40 gm wholegrain mustard
  • 2 x 375ml cans evaporated milk
  • 3 hard-boiled eggs, quartered
  • 125.00 ml dried multigrain breadcrumbs
  • 250.00 ml grated reduced-fat cheddar cheese
Instructions:
  • Boil pasta in salted water as per package instructions. Add broccoli for the final minute of cooking. Drain and return to the pan. Mix in onion, ham, peas, and season with pepper. Toss everything together.
  • In a jug, mix flour and mustard. Gradually add evaporated milk while stirring until smooth. Pour over the pasta and mix everything together well.
  • Pour the mixture into a 10-cup ovenproof dish. Nestle the eggs into the pasta. Mix breadcrumbs and cheese in a bowl, then sprinkle on top. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 15-20 minutes until golden. Serve and enjoy!
