Crunchy veggie-packed pasta salad with creamy dressing. Ideal for lunch or as a side dish.
Ingredients:
  • 250g dried farfalle pasta
  • 61.88 gm whole-egg mayonnaise
  • 21.00 gm lemon juice
  • 310g can corn kernels, drained
  • 1/2 red capsicum, chopped
  • 1 carrot, grated
  • 125g cherry tomatoes, halved
Instructions:
  • Boil pasta in a saucepan of salted water until tender (about 12 minutes), then drain and rinse under cold water.
  • In a bowl, mix together pasta, creamy mayonnaise, and a splash of zesty lemon juice. Stir in colorful corn, crispy capsicum, sweet carrot, and juicy tomatoes. Gently toss to blend everything together.
