Flavorful potato salad with a kick.
Ingredients:
  • 3kg desiree potatoes
  • 250g (1 cup) Light Sour Cream
  • 190g (1 cup) good-quality whole-egg mayonnaise
  • 62.50 ml coarsely chopped fresh dill
  • 62.50 ml coarsely chopped fresh continental parsley
  • 1 garlic clove, crushed
  • 40.00 ml finely chopped fresh mint
  • 23.40 gm Dijon mustard
  • 21.00 gm fresh lemon juice
  • 4 green shallots, ends trimmed, thinly sliced
Instructions:
