Creamy potato salad with tangy Dijon, mayo, chives, and sour cream.
Ingredients:
  • 1kg red potatoes
  • 176.25 gm sour cream
  • 68.75 gm sweet chilli sauce
  • 11.80 gm dijon mustard
  • 123.75 gm mayonnaise
  • 1/2 bunch chives, chopped, plus extra to serve
  • 1 onion, finely chopped
  • 2 eggs, hard-boiled, chopped
Instructions:
  • Peel and dice the potatoes uniformly. Steam over a double boiler or steamer basket for 10-15 minutes until fork-tender. Cut into 2cm pieces before serving.
  • In a large bowl, mix together all ingredients and gently fold in warm potatoes. Season generously with sea salt and pepper. Finish by garnishing with additional chives before serving.
