Indulgent pumpkin pasta bake with savory sausage and Parmesan - perfect for guests or a cozy dinner in.
Ingredients:
  • 1 pound rotini pasta
  • 1 pound sweet Italian sausage
  • 1 cup diced onion
  • 1 tablespoon minced garlic
  • 1 teaspoon red pepper flakes
  • 2.5 cups chicken broth
  • 1 (15 ounce) can pumpkin puree
  • 2 tablespoons crumbled cooked bacon
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1 cup heavy whipping cream
  • 1 cup grated Parmesan cheese
Instructions:
  • Preheat the oven to 375°F (190°C) and generously grease a 9x13-inch baking dish.
  • Boil a pot of well-seasoned water, cook the rotini until al dente, for about 8 minutes, then drain.
  • In a skillet over medium heat, brown and crumble the sausage for 5 to 10 minutes. Drain the sausage on paper towels, keeping 2 tablespoons of grease in the skillet. Add oil to the skillet with the grease, then cook onion, garlic, and red pepper flakes until the onion is soft, about 3 minutes.
  • Combine chicken broth, pumpkin, bacon, Italian seasoning, and salt with the onions, then bring to a boil. Reduce heat and simmer for 5 minutes. Stir in cream and sausage, simmer until creamy and thickened for about 5 minutes. Toss in rotini, then transfer to a baking dish and sprinkle with Parmesan cheese.
  • Bake until bubbly and golden brown, about 35 minutes in the preheated oven.
