Creamy seafood pasta with leeks, salmon, and crème fraiche - a quick and perfect meal for two on busy weeknights.
Ingredients:
  • 0.5 (8 ounce) package spaghetti
  • 1 large leek - light parts only, rinsed, and chopped
  • salt to taste
  • 0.5 cup white wine
  • 0.5 lemon, juiced
  • 1 cup creme fraiche
  • 1 teaspoon tarragon Dijon mustard
  • 1 pinch cayenne pepper, or to taste
  • 6 ounces skinless, boneless salmon, sliced
  • 0.5 cup chopped cilantro, or to taste
  • 1 pinch cayenne pepper
Instructions:
  • Boil a pot of salted water. Add spaghetti and cook for about 12 minutes until al dente. Drain and return to the pot.
  • In a saucepan over medium heat, melt butter. Cook and stir leeks in butter until slightly softened, about 6 to 7 minutes. Season with salt. Pour in white wine and lemon juice, bring to a boil, and scrape off any browned bits with a wooden spoon. Simmer until most of the liquid evaporates, around 5 minutes.
  • Combine creme fraiche, mustard, and a pinch of cayenne pepper with the leek mixture. Simmer on low for 5 minutes. Add salmon and cook until it flakes and turns opaque, about 2 to 3 minutes. Take the pan off the heat, mix in cilantro, and pour the sauce over spaghetti. Toss well to combine and finish with a sprinkle of cayenne pepper on top.
