Creamy whipped feta with Greek yogurt, sun-dried tomatoes, pine nuts, and parsley topping.
Ingredients:
  • 8 ounces chopped feta cheese
  • 0.75 cup Greek yogurt
  • 0.5 teaspoon lemon zest
  • freshly ground black pepper to taste
  • 3 tablespoons olive oil, divided
  • 1 tablespoon minced oil-packed dried tomatoes
  • 1 tablespoon pine nuts
  • 1 tablespoon minced fresh parsley
Instructions:
  • Prepare all your ingredients.
  • In a food processor, blend feta cheese, Greek yogurt, garlic, lemon zest, and black pepper until smooth.
  • Pulse several times to blend. While the food processor is on, gradually add 2 tablespoons of olive oil until the dip is velvety and smooth, which should take about 1 minute. Remember to scrape down the sides of the bowl as necessary.
  • Serve the mixture in a bowl or on a plate, and generously top it with sun-dried tomatoes, pine nuts, and parsley. Finish with a drizzle of the remaining olive oil before serving.
