Creole potato salad

Spicy creole potato salad - perfect for picnics or as a flavorful side dish with roasted meats. Unforgettable deep-south taste in every bite.
Ingredients:
  • 1.2kg red delight potatoes, chopped
  • 2 celery stalks, sliced, pale leaves reserved
  • 2 hard-boiled eggs, peeled, quartered (see note)
  • 3 dill pickles, finely chopped
  • 2 green onions, sliced
  • 1 green capsicum, cut into 4cm long strips
  • 123.75 gm light whole-egg mayonnaise
  • 20.00 ml red wine vinegar
  • 24.40 gm worcestershire sauce
  • 11.80 gm dijon mustard
  • 1.30 gm Tabasco sauce
  • Pinch of creole seasoning, to serve
Instructions:
  • Add the potato to a large saucepan and cover it with cold water. Bring to a boil over high heat and cook for 8 to 10 minutes until just tender. Drain the potato, rinse under cold water, and drain again.
  • Combine potato, celery, egg, pickles, onion, and capsicum in a large bowl.
  • In a medium jug, mix mayonnaise, vinegar, Worcestershire sauce, mustard, and Tabasco. Pour the dressing over the potato mixture and gently toss to combine.
  • Top the salad with the reserved celery leaves and sprinkle with seasoning before serving.
