Creamy, comforting vegetable medley passed down from grandma. Garden veggies in a luscious sauce, a family favorite. Save time by cutting corn off the cob while veggies simmer.
Ingredients:
  • 0.5 pound bacon
  • 2 tablespoons bacon grease
  • 0.5 cup finely chopped onion
  • 0.5 cup finely chopped green bell pepper
  • 2 cups chopped peeled tomatoes
  • 2 cups chopped fresh green beans
  • 0.75 teaspoon salt
  • 0.125 teaspoon pepper
  • 1.5 cups fresh corn kernels, cut from the cob
  • 3 tablespoons all-purpose flour
  • 3 tablespoons water
  • 1 cup evaporated milk
Instructions:
  • 1. In a large skillet over medium heat, cook bacon until crispy. Set aside and keep 2 tablespoons of bacon fat in the skillet. Saute onion and green pepper in the flavorful bacon fat until soft. Add tomatoes, green beans, salt, and pepper. Cover and simmer for 15 minutes. Stir in corn, cover, and cook until all vegetables are tender, about 20 minutes.
  • Combine flour and water in a small bowl. Add to vegetables and cook until thickened for about 2 minutes. Remove from heat and stir in evaporated milk. Top with crumbled bacon and serve hot.
