Crispy Christmas roast pork with spiced cherry port sauce

Make a delectable Christmas roast pork with crispy crackling, served with a flavorful cherry port sauce for an unforgettable holiday feast. Slice the roast easily by turning it crackle side down.
Ingredients:
  • 2kg Full Pork Rolled Loin
  • 36.40 gm olive oil
  • 19.20 gm sea salt flakes
  • 2 tsp cracked black pepper
  • 20.00 ml fennel seeds
  • Steamed greens, to serve
  • Roasted potatoes, to serve
  • Spiced cherry port sauce
  • 300g fresh cherries, pitted
  • 40.00 gm caster sugar
  • 1 cinnamon stick or quill
  • 1 star anise
  • 2.50 gm mixed spice
  • 60ml port
  • 20.00 ml red wine vinegar
  • 5.00 gm cornflour
Instructions:
  • Preheat oven to 230 degrees Celsius.
  • Place the pork on a plate and pat the rind dry with paper towel. Rub the pork with oil, then sprinkle salt, pepper, and fennel seeds to coat, pressing gently into the rind and cuts. Transfer the pork, rind-side up, to a roasting pan and bake at 220C for 30 mins until the skin starts to crackle and crisp. Lower the oven temperature to 180C and continue baking for 1 hour 20 mins until cooked through. Rest covered with foil for 15 mins before serving.
  • To prepare the spiced cherry port sauce, place cherries, sugar, cinnamon, star anise, mixed spice, and 1 tbsp of water in a frying pan over medium-high heat. Cook for 3 mins until sugar dissolves and cherries slightly soften. Stir in port and vinegar. In a small jug, mix cornflour and stock, then add to the cherry mixture. Stir for 2 mins until the sauce thickens. Cook for 1 more min until it darkens slightly. Transfer to a serving bowl.
  • Plate the pork alongside steamed greens, potatoes, and cherry sauce.
