Crispy potatoes with broccolini and lemon

Indulge in crispy roast potatoes with broccolini, rocket, and zesty lemon for a delightful side dish.
Ingredients:
  • 1kg carisma potatoes, peeled (see note)
  • 36.40 gm extra virgin olive oil
  • 1 bunch broccolini, trimmed, cut into 4cm lengths
  • 65.63 gm lemon juice, plus lemon wedges to serve
  • 2 tsp lemon zest
  • 50g baby rocket
  • 40.00 ml pepitas, toasted
Instructions:
  • In a large saucepan, add the potato and cover with cold water. Bring to a boil over high heat, then reduce to medium and simmer for 12 minutes until just tender. Drain and let cool for 20 minutes before cutting into 2.5cm pieces.
  • In a large frying pan over high heat, fry the potatoes in batches for 10 minutes until golden and crispy, shaking and turning often. Transfer to a heatproof bowl. Add broccolini to the pan and cook for 3 minutes until bright green and tender.
  • Combine the broccolini, lemon juice, and lemon zest with the potato. Toss together and place on a serving platter. Season with salt and pepper, then add rocket and pepitas on top. Serve with lemon wedges.
