Crispy Prosciutto and Orange Salad

Tangy vinaigrette enhances meaty salad flavors.
Ingredients:
  • 3 tablespoons olive oil
  • 2 tablespoons orange juice
  • 2 tablespoons champagne vinaigrette
  • 1 tablespoon honey
  • 4 slices prosciutto
  • 4 cups arugula
  • 3 oz chèvre (goat) cheese, crumbled (3/4 cup)
  • 1/3 cup slivered almonds, toasted
  • 2 oranges, peeled, sectioned
  • 12 pitted dates, chopped
  • 4 pitted dates, quartered, if desired
Instructions:
  • Preheat oven to 350°F. Whisk vinaigrette ingredients in a small bowl until well blended; set aside.
  • Arrange the prosciutto on a baking rack set inside a pan. Bake until it turns crisp, about 7 to 10 minutes. Take it out of the oven.
  • Toss fresh arugula with flavorful vinaigrette.
  • Create a delicious salad by starting with a bed of 1 cup arugula on a serving plate. Top it with a blend of cheese and almonds, followed by arranging orange sections in a circle on top. Sprinkle with chopped dates and crown it with 1 crisp prosciutto slice. Complete the presentation by placing 4 date quarters around the edge of the plate.
