Crispy skin salmon paired with vibrant citrus salad featuring a variety of in-season fruits for a burst of flavor!
Ingredients:
  • 4 (about 150g each) salmon fillets, skin on
  • 1 tsp cumin seeds
  • 2 limes, juiced
  • 8.00 gm brown sugar
  • 12.20 gm fish sauce
  • 1 tsp finely grated ginger
  • 1 tsp sesame oil
  • 2 Ruby Red grapefruits or pomelos, peeled, segmented
  • 2 limes, extra, peeled, segmented
  • 2 Lebanese cucumbers, peeled into ribbons
  • 250.00 ml mint leaves
  • 125.00 ml coriander leaves
  • 1 red onion, thinly sliced
  • 1 long red chilli, thinly sliced (optional)
  • 75g cashew
Instructions:
  • Preheat a large frying pan over medium-high heat. Coat both sides of the salmon with olive oil spray, season, and sprinkle with cumin seeds. Cook skin-side down for 2 minutes until crisp, then flip and cook for an additional 2-3 minutes (or longer for desired doneness). Remove from heat, cover with foil, and let rest for 5 minutes before serving.
  • In a small jug, whisk together lime juice, sugar, fish sauce, ginger, and oil for a flavorful dressing.
  • In a bowl, mix together grapefruit or pomelo, lime segments, cucumber, mint, coriander, red onion, and chili (if using). Drizzle with dressing and toss well. Divide into serving plates, then top with salmon and sprinkle with cashews.
