Crumbed Avocado Steak

Pan-seared Scotch filet steaks coated in crispy breadcrumbs, adorned with creamy avocado slices, and drizzled with decadent mustard sauce.
Ingredients:
  • 4 Scotch fillets (chuck eye)
  • 0.5 cup all-purpose flour
  • salt and ground black pepper to taste
  • 2 eggs
  • 3 cups fresh bread crumbs
  • 2 tablespoons chopped fresh parsley
  • 0.25 cup butter
  • 2 tablespoons vegetable oil
  • 1 avocado - peeled, pitted and sliced
  • 1 tablespoon lemon juice
  • salt and pepper to taste
  • 2 teaspoons Dijon mustard
  • 0.5 cup butter, diced and softened
Instructions:
  • Flatten the steaks to 1/2 inch thickness.
  • Gently dust steaks with seasoned flour. Dip them in beaten eggs, then cover with a mixture of breadcrumbs and parsley, pressing down. Chill steaks on a tray until it's time to cook.
  • In a large frying pan over medium-high heat, melt 1/4 cup butter with oil. Sear steaks until golden brown and cooked to your liking. Set aside to keep warm.
  • Combine egg yolks, lemon juice, salt, pepper, and mustard in a metal bowl. Set the bowl over simmering water and stir until the sauce thickens. Whisk in the remaining 1/2 cup softened butter, then remove from heat.
  • Lay the steaks on serving plates, add two slices of avocado to each steak, and drizzle the Mustard Sauce over them.
