Crunchy thick-cut potato chips

Crispy double-baked potatoes seasoned with sweet paprika for a delicious twist.
Ingredients:
  • Sea salt, to serve
  • 20.00 gm self-raising flour
  • 1.25 gm paprika
  • 1.2kg red delight potatoes, peeled
  • Olive oil cooking spray
Instructions:
  • 1. Preheat the oven to 200C/180C fan-forced. 2. Slice potatoes into 1.5cm-thick slices, then cut each slice into 1.5cm-thick chips. 3. Place the potatoes in a large saucepan and cover with cold water. 4. Bring the saucepan to a boil over high heat, then reduce heat to medium and boil for 3 minutes until potatoes are just tender. 5. Drain the potatoes before proceeding with the recipe.
  • Place back in the pan over gentle heat. Toss for 30 seconds to 1 minute until liquid reduces. Take off heat. Put onto a greased baking tray. Spritz with oil. Let sit for 10 to 15 minutes. Dust with flour and paprika. Season generously with salt and pepper. Gently mix. Give a good spray of oil.
  • Bake the chips for 30-35 minutes, flipping and spritzing with oil halfway through, until they are golden and crisp. Sprinkle with sea salt before serving.
