Italian-inspired rolled chicken: chicken breasts pounded thin, filled with prosciutto, provolone, spinach, cooked in olive oil and white wine.
Ingredients:
  • 8 skinless, boneless chicken breast halves - pounded thin
  • 3 tablespoons olive oil, divided
  • salt and black pepper to taste
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained well
  • 8 slices thinly sliced prosciutto
  • 8 slices provolone cheese
  • 0.5 cup freshly grated Parmesan cheese
  • 1.5 cups dry white wine
Instructions:
  • Coat the chicken cutlets with a luscious layer of olive oil, then generously sprinkle them with a perfect balance of salt and pepper for a burst of flavor.
  • Press out any remaining water from the frozen spinach, then generously season with fragrant olive oil, salt, and pepper for enhanced flavor.
  • Layer each chicken cutlet with a piece of prosciutto, a piece of provolone, a thin layer of spinach, and a sprinkle of Parmesan on top.
  • Roll up each chicken cutlet starting from the shorter, tapered end, then secure with a toothpick.
  • In a large skillet over medium heat, warm 2 tablespoons of olive oil. Add chicken to the skillet and pour in the wine. Cook the chicken, flipping occasionally, until the wine evaporates completely and the chicken is fully cooked, and its juices run clear, about 20 minutes.
