Transform tiny, mouse-like cucamelons into delicious pickles with a refreshing cucumber flavor, perfect for devouring in just seven days.
Ingredients:
  • 2.5 cups cucamelons
  • 2 green chile peppers, halved and seeded
  • 2 sprigs fresh dill
  • 1 tablespoon yellow mustard seeds
  • 1 tablespoon dill seed
  • 2 teaspoons crushed black peppercorns
  • 0.75 cup water
  • 0.75 cup apple cider vinegar, or more as needed
  • 1 tablespoon coarse salt
Instructions:
  • Check the large jar for cracks. Place it in simmering water while preparing the cucamelons. Clean a new, unused lid and ring with warm, soapy water.
  • Add cucamelons, chile peppers, dill, yellow mustard seeds, dill seed, and peppercorns to the sterilized jar.
  • In a saucepan, bring water, vinegar, and salt to a boil. Stir for about 1 minute until salt dissolves. Remove from heat and allow to cool.
  • Completely cover the cucamelons with the vinegar mixture in the jar. If needed, combine equal parts water and vinegar to add to the jar. Seal the jar and let it sit for at least 3 to 4 days.
