Decadent cookies with figs, raisins, orange zest, walnuts, honey, cinnamon, and chocolate - a flavor-packed delight for all.
Ingredients:
1pounddried figs
1cupraisins
2.5 teaspoons orange zest
0.5 poundchoppedwalnuts
1cuphoney
1teaspoonground cinnamon
1cupsemi-sweet chocolate chips
1cuporange marmalade
2.5 cups siftedall-purpose flour
2.5 teaspoons baking powder
0.5 cupshortening
0.25 cupmilk
0.5 teaspoonvanilla extract
Instructions:
Combine figs, raisins, orange zest, and walnuts in a food processor, blender, or food grinder until finely ground. If needed, add a couple of tablespoons of water to adjust consistency. Slowly mix in honey, cinnamon, chocolate chips, and orange marmalade. Set aside. Preheat oven to 400°F (200°C) and grease two baking sheets.
Combine flour, sugar, and baking powder in a large bowl. Add shortening and mix until it resembles coarse crumbs. Stir in eggs, milk, and vanilla until a ball forms. Roll out dough on a floured surface to 1/4 inch thickness. Cut into 4-inch wide strips. Spread filling on half of each strip, then fold over and seal edges with a fork. Slice strips crosswise at an angle every inch to make diamond shapes. Transfer cookies to a prepared baking sheet.
Bake in a preheated oven until golden brown, about 15 to 20 minutes. After baking, transfer to wire racks to cool. Finish by glazing with your preferred confectioners' glaze and adding festive sprinkles on top.
