Cuddureddi Christmas biscuits (Sicily)

Delight with Sicilian Christmas biscuits for guests or gift-giving.
Ingredients:
  • 687.50 ml plain flour
  • 107.50 gm caster sugar
  • 4.00 gm baking powder
  • 125g butter, cubed, chilled
  • 128.75 gm milk
  • 250.00 ml dried figs
  • 28.75 gm walnuts
  • 62.50 ml slivered almonds, toasted
  • 42.50 gm Sultanas
  • 30g good-quality dark chocolate, grated
  • 1 small lemon, rind finely grated
  • 1 small orange, rind finely grated
  • 1.25 gm ground cinnamon
  • 1/4 tsp ground cloves
  • 37.50 gm pure icing sugar
Instructions:
  • In a food processor, combine flour, caster sugar, and baking powder. Pulse for 30 seconds. Add butter and pulse until mixture resembles fine breadcrumbs. While the processor is running, pour in milk until dough forms. Transfer dough to a floured surface and knead until smooth. Divide dough in half and shape into two 1.5cm-thick discs. Wrap in greaseproof paper and refrigerate for 1 hour until firm.
  • 1. Place figs in a bowl and cover with warm water. Let them soak for 10 minutes, then drain. 2. Transfer the soaked figs to a food processor and pulse until roughly chopped. 3. In the same bowl, roughly chop walnuts and almonds in the food processor. 4. Add the nuts to the chopped figs along with sultanas, chocolate, honey, lemon and orange zest, cinnamon, and cloves. 5. Mix everything together thoroughly. Enjoy!
  • Preheat your oven to 180°C. Prepare 2 baking trays with parchment paper. Roll out the dough to a 3mm thickness between 2 sheets of baking paper. Cut the dough into 6cm x 9cm rectangles. Fill and shape the biscuits as directed. Transfer to the prepared baking trays and continue with the remaining dough and filling.
  • Bake the biscuits until they are a light golden color, for about 15 to 20 minutes. Let them cool on the trays for 5 minutes, then transfer to a wire rack to cool completely. Dust with icing sugar right before serving.
