Cullen skink fishcakes

Ingredients:
1 kg potatoes
1onion
olive oil
1heaped tablespoonplain flour
600 ml semi-skimmed milk
280 g boneless smoked haddock, from sustainable sources
2bunches of chives (40g)
1 large free-range egg
extra virgin olive oil
1lemon
Instructions:
Peel and chop the potatoes before boiling them in salted water until tender. At the same time, finely chop and cook the onion in olive oil until softened. Stir in flour, milk, and cook until thickened. Poach the smoked haddock in the sauce, then blend a quarter of chives with the sauce until smooth. Mix mashed potatoes with egg, chives, salt, pepper, and haddock. Shape into patties and fry until golden. Serve the fishcakes on the chive sauce, garnish with chives, drizzle with olive oil, and serve with lemon wedges.
