Curly carrots with creamy dip recipe

Transform carrots into adorable curls for a delightful and satisfying pre-dinner snack.
Ingredients:
  • 2 large carrots, peeled
  • 140g yoghurt
  • 80ml buttermilk
  • 1 spring onion, finely chopped
  • 2 tsp finely chopped dill
  • 1 lemon, rind finely grated, juiced
Instructions:
  • First, in a sizeable bowl, mix 6 cups (1.5L) of water with 3 cups of ice. Then, using a vegetable peeler, create long, thin strips along the length of the carrots. Shape the strips into curls and place them in the iced water. Let sit for 20 minutes or until the carrots are nice and crisp.
  • In a bowl, combine yogurt, buttermilk, spring onion, dill, lemon zest, and 2 tsp lemon juice. Season with pepper and let sit for 10 minutes for flavors to meld. Taste and adjust seasoning with more pepper or lemon juice as needed.
  • Thoroughly drain carrots then enjoy with dip.
