Savory Indian spiced chicken and potato stew with tomatoes, Swiss chard, and yogurt. Top with fragrant basmati rice. Flavor to your liking.
Ingredients:
  • 2 tablespoons olive oil
  • 1 teaspoon cumin seed
  • 0.5 teaspoon garam masala
  • 0.25 teaspoon ground cardamom
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon black mustard seed
  • 0.5 teaspoon salt
  • 2 cloves garlic, minced
  • 2 (4 ounce) chicken thighs, cut into bite size pieces
  • 2 medium potatoes, diced
  • 2 roma (plum) tomatoes, diced
  • 0.5 bunch Swiss chard, chopped
  • 1 (8 ounce) container plain yogurt
Instructions:
  • Heat oil in a large skillet over medium heat. Add cumin seeds, garam masala, cardamom, cayenne pepper, mustard seeds, salt, and garlic. Cook until seeds start to pop, then add chicken and potatoes. Cook for about 15 minutes until chicken is almost cooked through.
  • Gently fold in tomatoes, chard, and yogurt. Cover and simmer for 15 minutes, or until potatoes are tender and chicken is fully cooked.
