Revamped classic egg mayo sandwich with maximum flavor and reduced fat content.
Ingredients:
  • 3 eggs
  • 28.00 gm medium curry paste
  • 9.20 gm vegetable oil
  • 80g (1/4 cup) no-cholesterol 98% fat-free mayonnaise (Weight Watchers brand)
  • 3 green shallots, trimmed, finely chopped
  • Salt & freshly ground black pepper
  • 8 slices sourdough bread
  • 40g baby spinach leaves, stems trimmed, washed, dried
Instructions:
  • Place the eggs in a small saucepan filled with cold water. Bring to a boil over high heat. Reduce heat to medium and gently boil, uncovered, stirring occasionally, for 7 minutes. Drain and cool the eggs under running water, then set aside to cool for 10 minutes.
  • In a small saucepan over medium heat, combine the curry paste and oil. Cook, stirring, for 30 seconds until it begins to bubble and becomes fragrant. Remove from heat and allow it to cool.
  • Peel the eggs and transfer to a medium bowl. Gently mash with a fork. Mix in the curry paste, mayonnaise, and green shallots. Season with salt and pepper to taste.
  • Place fresh spinach leaves on top of 4 slices of bread, ensuring even coverage. Spread the egg mixture evenly over the spinach and place the remaining slices of bread on top to complete the sandwich.
