Spiced lamb curry: Tender lamb infused with a blend of aromatic spices for a deliciously easy meal.
Ingredients:
  • 2 tablespoons vegetable oil, or as needed
  • 2 pounds cubed lamb stew meat
  • 2 tablespoons vegetable oil
  • 2 tablespoons ground coriander
  • 1.5 teaspoons ground cumin
  • 1 tablespoon ground cardamom
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon cayenne pepper, or to taste
  • 2 cups beef stock
  • salt to taste
  • 0.25 cup plain yogurt
  • 1 teaspoon lemon juice
Instructions:
  • In a Dutch oven over medium-high heat, heat 2 tablespoons of vegetable oil. Brown the lamb meat in batches on all sides, adding more oil as needed, for about 3 minutes per batch. Set aside. Then, heat the remaining 2 tablespoons of vegetable oil in the Dutch oven over medium heat. Sauté the onions until tender and golden brown for about 10 minutes. Add the coriander, cumin, cardamom, ginger, turmeric, garlic powder, black pepper, and cayenne pepper. Cook until the spices are fragrant for about 1 minute.
  • Place the lamb back in the Dutch oven and pour in the beef stock. Season with salt to your liking. Bring to a boil over high heat, then reduce and simmer covered until the lamb is very tender, approximately 1 hour.
  • Uncover the lamb once it's melt-in-your-mouth tender, simmer for another 20 minutes until the sauce lightly thickens. Finish by swirling in the yogurt and lemon juice just before serving.
