Curried Pumpkin Soup

Creamy apple and pumpkin soup with aromatic veggies, curry spices, and a dollop of sour cream.
Ingredients:
  • 4 Macintosh apples - peeled, cored and chopped
  • 1 tablespoon butter
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 (15 ounce) can pumpkin puree
  • 4 cups chicken broth
  • 1 cup water
Instructions:
  • In a large saucepan over medium heat, melt butter until sizzling. Add onion, garlic, curry, and cumin. Cook and stir frequently until onion is tender and aromatic.
  • Combine apples, pumpkin, broth, water, and sugar in a pot. Bring to a boil, stirring frequently. Cover, reduce heat to low, and simmer for 25 minutes, stirring occasionally.
  • Blend the soup until smooth in a food processor or a blender.
  • Reheat the soup in the saucepan, covered, over low heat.
