Spicy chicken patties that steal the show at any gathering.
Ingredients:
  • 1 onion, finely grated
  • 1 bunch fresh coriander, leaves removed
  • 1kg chicken mince
  • 40.00 ml plain flour
  • 56.00 gm mild curry paste
  • 1 egg, beaten
  • 4.80 gm salt
  • 500.00 ml thick plain yoghurt
  • 62.50 gm mango chutney
  • 75.90 gm vegetable oil
  • 100g packet mini pappadums, cooked
Instructions:
  • Prepare a baking tray lined with baking paper. Finely chop three-quarters of coriander leaves and combine them in a bowl with mince, onion, flour, curry paste, egg, salt, and freshly ground black pepper. Mix well. Shape heaped tablespoonfuls of the mixture into small patties and place them on the tray. Cover and refrigerate for 1 hour.
  • Mix yoghurt and chutney together, then cover and let sit.
  • In a non-stick frying pan over medium heat, heat oil and cook patties in batches for 3 minutes on each side until they are golden and fully cooked. Let them cool before serving.
  • Present the patties accompanied by pappadums, mango yogurt, and the leftover coriander leaves.
