Deliciously versatile curry chicken salad with grapes, almonds, and parsley - perfect on salads, in croissants, or as a satisfying snack.
Ingredients:
  • 0.5 cup butter
  • 2 cups mayonnaise
  • 0.25 cup minced garlic
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon curry powder
  • 4 cups shredded cooked chicken
  • 2 cups halved red grapes
  • 0.5 cup toasted slivered almonds
Instructions:
  • Melt butter in a large saucepan over low heat, then cool to room temperature.
  • Combine mayonnaise, garlic, parsley, and curry powder with butter until well mixed. Gently mix in chicken, grapes, and almonds. Place mixture into a serving bowl, cover with plastic wrap, and chill in the refrigerator for at least 1 hour to allow flavors to meld.
